Introducing Serving Size-Based Food Costing in Galley
A Smarter Way to Calculate Food Costs
Accurate food costing is critical for any food business, but traditional approaches can be rigid—often forcing operators to input sales prices based on bulk batch sizes rather than individual servings. At Galley, we understand that food businesses sell in various ways, from large-scale batch production to individual portioning. That’s why we’re introducing Serving Size-Based Food Costing, an enhancement designed to make food cost calculations more precise and aligned with real-world sales.
What’s Changing?
Previously, Galley required users to enter a total aggregate sales price for a full recipe batch to determine food cost percentages. This worked well for businesses that structured their recipes for single portions but posed a challenge when building recipes to bulk scales.
With this update, food costing can now be calculated based on serving size. Instead of defining food costs at the batch level, operators can now specify:
Serving Size – The portion they sell to customers (e.g., 1 cup of soup).
Servings Per Container – How many servings are sold together (e.g,. a 2 cup container). .
Sales Price Per Serving – The price assigned to how the customer buys the dish.
By structuring food costing in this way, Galley automatically calculates cost per container, allowing operators to see accurate food cost percentages per serving instead of just per batch.

This enhancement significantly improves cost accuracy, pricing flexibility, and operational efficiency:
